  • 1 cup Arborio rice
  • 4 cups gluten-free chicken or vegetable broth warmed
  • 1/2 cup white wine optional
  • 1 small onion finely chopped
  • 2 tbsp olive oil
  • 1/3 cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a pan and sauté onion until translucent.
  • Add Arborio rice and stir for 1–2 minutes to coat.
  • Pour in white wine and cook until absorbed.
  • Gradually add warm broth, 1 cup at a time, stirring constantly.
  • Continue adding broth and stirring until rice is creamy and al dente.
  • Stir in Parmesan cheese and serve warm.
