For the Chocolate Cookies
- 1 cup almond flour
- 1/3 cup Dutch process cocoa powder
- 1/3 cup monk fruit erythritol blend
- 2 tbsp allulose
- 4 tbsp unsalted butter softened
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/4 tsp baking soda
- 1/8 tsp fine sea salt
For the Vanilla Cream Filling
- 3 tbsp unsalted butter very soft
- 1/3 cup powdered monk fruit sweetener
- 1 tbsp heavy cream
- 1/2 tsp vanilla bean paste or extract
- salt a pinch
Preheat oven to 325°F and line a baking sheet with parchment paper.
In a bowl, mix almond flour, cocoa powder, sweeteners, baking soda, and salt.
Add butter, egg yolk, and vanilla; mix until dough forms.
Roll out dough between parchment, cut into circles, and place on baking sheet.
Bake for 10–12 minutes; let cookies cool completely.
For the filling, beat all ingredients until smooth, then spread between two cookies.
