  • 1 box brownie mix plus eggs, oil, and water as required
  • 1 cup crushed Thin Mint cookies
  • 0.5 tsp peppermint extract
  • 0.5 cup semi-sweet chocolate chips
  • 0.25 cup chopped mint chocolate or Andes mints

Instructions
 

  • Preheat oven to 350°F (175°C) and grease an 8x8-inch pan.
  • Prepare brownie mix according to package instructions.
  • Stir in peppermint extract, crushed Thin Mints, and chocolate chips.
  • Pour batter into pan and spread evenly.
  • Sprinkle chopped mint chocolate on top.
  • Bake for 25–30 minutes or until a toothpick comes out mostly clean.
