  • ½ cup brown sugar
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • Garlic cloves optional
  • Citrus peel optional
  • Fresh herbs optional

Instructions
 

  • Combine water, salt, and brown sugar in a large container.
  • Stir until completely dissolved.
  • Add bay leaves, peppercorns, and any optional aromatics.
  • Submerge turkey wings fully in the brine.
  • Cover and refrigerate for 8–12 hours.
  • Remove wings, rinse, and pat dry before smoking.
