Smashed Feta Sweet Potato Boats

Ingredients
  

Sweet Potatoes

  • 2 medium sweet potatoes washed and halved lengthwise
  • 1 tbsp olive oil

Topping

  • 1/2 cup crumbled feta cheese
  • 1 small cucumber diced
  • 1/2 red onion finely chopped
  • 1 tbsp fresh parsley chopped
  • 1 tsp lemon juice freshly squeezed
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C). Place sweet potato halves on a baking tray, drizzle with olive oil, and season with salt and pepper.
  • Roast for 35–40 minutes, until tender and slightly caramelized.
  • While sweet potatoes are roasting, combine feta, cucumber, red onion, parsley, lemon juice, salt and pepper in a bowl. Mix gently.
  • Once sweet potatoes are out of the oven, lightly smash the flesh with a fork.
  • Top each sweet potato half with the feta mixture. Serve warm or at room temperature.

Notes

These are great for meal prep! Feel free to add olives or cherry tomatoes for more variety.
