  • 2 slices sourdough bread toasted
  • 1 ripe avocado mashed
  • 2 eggs poached or fried
  • 1/4 cup feta cheese crumbled
  • chili flakes optional
  • salt and pepper to taste

Instructions
 

  • Toast the sourdough slices to your liking.
  • In a bowl, mash the avocado with a pinch of salt and pepper.
  • Cook the eggs to your preference – poached or fried work great.
  • Spread the mashed avocado onto the toasted bread.
  • Top with crumbled feta, the cooked egg, and a sprinkle of chili flakes if desired.
  • Season with extra salt and pepper and serve immediately.

Notes

For extra zing, add a squeeze of lemon to the avocado or top with microgreens for freshness.
