Main Ingredients
- 1 cup brown rice cooked
- 1/2 cup green lentils cooked
- 1/2 cup cucumber diced
- 1/2 cup carrots shredded
- 1/4 cup hummus
- 2 tbsp lemon juice
Cook brown rice according to package instructions.
Boil lentils until tender, about 20 minutes, then drain.
Dice cucumber and shred carrots.
In a bowl, layer rice, lentils, cucumber, and carrots.
