  • 1 tbsp olive oil
  • 1 small onion finely chopped
  • 3 cups vegetable broth warmed
  • 1 cup frozen peas
  • 1/4 cup Parmesan cheese grated

Instructions
 

  • Heat olive oil in a pan over medium heat.
  • Sauté onion until soft and translucent.
  • Stir in the arborio rice and cook for 1–2 minutes.
  • Gradually add warm broth, stirring constantly until absorbed.
  • Add peas during the last 5 minutes of cooking.
  • Stir in Parmesan cheese before serving.
