  • 1.5 cups finely grated Parmigiano Reggiano from a block if possible
  • freshly ground black pepper optional
  • 1/2 tsp truffle oil or to taste, total for whole batch
  • fine sea salt or truffle salt to taste

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Spoon small mounds of grated Parmesan onto the sheet, about 2 inches apart.
  • Flatten each mound slightly with the back of a spoon.
  • Sprinkle lightly with salt and pepper (if using).
  • Bake for 5–7 minutes, until golden and crisp.
  • Drizzle lightly with truffle oil after baking and let cool completely before serving.
