  • 1 lb flank steak thinly sliced
  • 1 cup quinoa cooked
  • 1 cup cherry tomatoes halved
  • 0.5 cup cucumber diced
  • 0.25 cup red onion thinly sliced
  • 0.33 cup feta cheese crumbled

Instructions
 

  • Marinate steak in olive oil, lemon juice, garlic, and oregano for 30 minutes.
  • Grill or sear steak over medium-high heat for 3–4 minutes per side.
  • Cook quinoa according to package instructions and let cool slightly.
  • Arrange quinoa in bowls and top with steak slices.
  • Add tomatoes, cucumber, red onion, and feta cheese.
  • Drizzle with extra olive oil or tzatziki sauce if desired.
