Ingredients
  

Soup Base

  • 1 tbsp olive oil
  • 2 boneless skinless chicken breasts diced or shredded
  • 3 cloves garlic minced
  • 1/2 tsp red pepper flakes adjust to taste
  • 1/3 cup sun-dried tomatoes chopped
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 9 oz cheese tortellini fresh or refrigerated
  • 2 cups baby spinach roughly chopped
  • salt and pepper to taste

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chicken and cook until browned and cooked through. Remove and set aside.
  • In the same pot, sauté garlic and red pepper flakes until fragrant, about 1 minute. Stir in sun-dried tomatoes.
  • Pour in chicken broth and bring to a gentle simmer. Stir in heavy cream and Parmesan cheese. Let melt and combine.
  • Return cooked chicken to the pot. Add tortellini and simmer for 4–5 minutes until pasta is tender.
  • Stir in spinach and cook until wilted. Season with salt and pepper to taste.
  • Serve hot, topped with extra Parmesan and fresh basil if desired.

Notes

This soup thickens as it sits—add a splash of broth or cream when reheating. Great for meal prep and cozy lunches!
