  • 2 whole trout cleaned and butterflied
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp freshly ground black pepper
  • 1/2 tsp salt

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Mix olive oil, lemon zest, lemon juice, pepper, and salt in a small bowl.
  • Brush the mixture inside and outside of the trout.
  • Place trout on a baking sheet lined with parchment.
  • Bake for 15–20 minutes until fish flakes easily with a fork.
  • Serve hot with extra lemon wedges if desired.
