- 2 whole trout cleaned and butterflied
- 2 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 tsp freshly ground black pepper
- 1/2 tsp salt
Preheat oven to 375°F (190°C).
Mix olive oil, lemon zest, lemon juice, pepper, and salt in a small bowl.
Brush the mixture inside and outside of the trout.
Place trout on a baking sheet lined with parchment.
Bake for 15–20 minutes until fish flakes easily with a fork.
