  • 1/2 cup almond flour
  • 1/3 cup cocoa powder
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1/4 cup coconut oil melted
  • 1/2 tsp peppermint extract
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line an 8x8" pan with parchment.
  • In a bowl, whisk eggs, coconut oil, coconut sugar, and peppermint extract.
  • Add almond flour, cocoa powder, baking soda, and salt; mix to combine.
  • Fold in chocolate chips.
  • Pour batter into pan and smooth the top.
  • Bake for 20–25 minutes, cool before slicing.
