- 1 cup almond flour
- 1 3/4 cups powdered sugar
- 3 large egg whites room temperature
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- pumpkin spice or apple butter for filling
Sift almond flour and powdered sugar together in a bowl.
Beat egg whites until foamy, then gradually add granulated sugar and beat to stiff peaks.
Fold dry ingredients into meringue with spices until smooth and glossy.
Pipe circles onto baking sheet and let sit 30–45 minutes until a skin forms.
Bake at 300°F (150°C) for 15–18 minutes; cool completely.
