  • 2 boneless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • oil for frying

Instructions
 

  • Pound chicken breasts to even thickness.
  • Season with salt and pepper.
  • Dredge in flour, dip in egg, then coat with panko breadcrumbs.
  • Heat oil in a skillet over medium heat.
  • Fry chicken until golden and crispy, about 3–4 minutes per side.
  • Slice and serve over rice with veggies and katsu sauce.
