Instructions
Preheat oven to 325°F (160°C). Grease a springform pan.
Mix crushed Oreos and melted butter. Press into bottom of pan. Bake crust for 10 minutes, then cool.
In a food processor, blend cottage cheese until completely smooth.
Add sugar, eggs, and vanilla extract to the blended cottage cheese. Mix until combined.
Fold in chopped Oreos and pour the filling over the crust.
Bake for 50–60 minutes or until the center is set. Let cool at room temperature.
Refrigerate for at least 2 hours before serving. Garnish with extra Oreos if desired.
Notes
You can substitute part of the cottage cheese with cream cheese for a richer texture, or use low-fat Oreos for a lighter option.
