Cottage Cheese Oreo Cheesecake

Ingredients
  

Crust

  • 20 Oreo cookies crushed
  • 4 tbsp butter melted

Filling

  • 2 cups cottage cheese blended until smooth
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 6 Oreo cookies chopped, folded into batter

Instructions
 

  • Preheat oven to 325°F (160°C). Grease a springform pan.
  • Mix crushed Oreos and melted butter. Press into bottom of pan. Bake crust for 10 minutes, then cool.
  • In a food processor, blend cottage cheese until completely smooth.
  • Add sugar, eggs, and vanilla extract to the blended cottage cheese. Mix until combined.
  • Fold in chopped Oreos and pour the filling over the crust.
  • Bake for 50–60 minutes or until the center is set. Let cool at room temperature.
  • Refrigerate for at least 2 hours before serving. Garnish with extra Oreos if desired.

Notes

You can substitute part of the cottage cheese with cream cheese for a richer texture, or use low-fat Oreos for a lighter option.
