Ingredients
  

Pancake Ingredients

  • 1/2 cup cottage cheese full-fat or low-fat
  • 2 eggs
  • 1 ripe banana mashed
  • 1/4 tsp cinnamon optional
  • 1/4 tsp baking powder optional, for fluffier texture
  • butter or oil for cooking

Instructions
 

  • In a blender or bowl, combine cottage cheese, eggs, banana, cinnamon, and baking powder (if using). Blend or mash until smooth.
  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Pour small rounds of batter onto the skillet. Cook for 2–3 minutes until bubbles form, then flip and cook 1–2 minutes more until golden.
  • Serve warm with toppings like nut butter, fresh fruit, or maple syrup.
