  • 3 eggs large
  • 0.5 cup granulated sugar
  • 1 tbsp instant coffee dissolved in 1 tbsp hot water
  • 0.5 cup all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup whipped cream or coffee-flavored whipped cream, for filling
  • powdered sugar for dusting

Instructions
 

  • Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  • Beat eggs and sugar together until thick and pale.
  • Mix in dissolved coffee.
  • Sift in flour, baking powder, and salt; fold gently until combined.
  • Pour into prepared pan and spread evenly.
  • Bake for 10–12 minutes. Roll warm cake in parchment to form shape, cool, then fill with whipped cream and dust with powdered sugar.
