Chocolate Chunk Greek Yogurt Banana Bread

Ingredients
  

Wet Ingredients

  • 3 ripe bananas mashed
  • 1/2 cup Greek yogurt
  • 1/3 cup honey
  • 2 eggs room temperature
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Add-ins

  • 3/4 cup chocolate chunks plus extra for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.
  • In a large bowl, mash the bananas. Whisk in Greek yogurt, honey, eggs, and vanilla extract until well combined.
  • In another bowl, whisk together flour, baking soda, and salt.
  • Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
  • Fold in the chocolate chunks.
  • Pour batter into prepared loaf pan and sprinkle additional chocolate chunks on top.
  • Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

You can substitute chocolate chunks with chocolate chips or nuts. This bread also freezes well — just slice and store in an airtight bag.
