Instructions
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line with parchment paper.
In a large bowl, mash the bananas. Whisk in Greek yogurt, honey, eggs, and vanilla extract until well combined.
In another bowl, whisk together flour, baking soda, and salt.
Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
Fold in the chocolate chunks.
Pour batter into prepared loaf pan and sprinkle additional chocolate chunks on top.
Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
You can substitute chocolate chunks with chocolate chips or nuts. This bread also freezes well — just slice and store in an airtight bag.
